Provençal Recipe Booklet
Cherry Clafoutis
Prep Time: 10 minutes
Cook Time: 45 minutes

Ingredients:
3 eggs
3 tablespoons flour
3 tablespoons sugar
¼ teaspoon salt
2 cups milk
1 lb of pitted sweet cherries

Directions:
Pre-heat the oven to 425F.
Mix eggs, flour, sugar and milk.
Add the mixture to the heated cream and cook slowly until it is thickened.
Pour into a well-buttered heated pie pan.
Spread the pitted sweet cherries evenly in the dough.
Cook for 45 minutes, and then cool.
Meant to be eaten cold.
Crème Brûlée
Prep Time: 10 minutes
Cook Time: 45 minutes

Ingredients:
4 cups of heavy cream
10 egg yolks
10 tablespoons white sugar
¾ teaspoons vanilla extract
3 tablespoons brown sugar


Directions:

   1. Heat the cream in a saucepan and stir over a low heat.
   2. Mix the egg yolks, white sugar, and vanilla extract together.
   3. Add the mixture to the heated cream and cook slowly until it is thickened.
   4. Once thickened, place in refrigerator for one hour, or over night.
   5. When cold, place the cream into individual bowls for serving.
   6. Add a coat of brown sugar and place under grill to caramelize the sugar.

Suggestion to caramelize: heat oven to 300F and place crème brûlée on top rack. Keep a close eye on the sugar and make sure it doesn’t burn too much!
Almond Financier
Prep Time: 10 minutes
Cook Time: 15 minutes

Ingredients:
1½ cups of confectioner’s sugar
7/8 cup butter
2/3 cup flour
5/8 cup ground almonds (powder)
1 cup ground hazelnut (powder)

Directions:
Pre-heat the oven to 465F.
Melt the butter to a golden brown color.
Mix together the sugar, flour, almond powder and hazelnut powder.
Stirring constantly, incorporate the egg whites to the mix and the melted butter.
Coat the pan molds with butter and pour the mix.
