The Puyricard Chocolate Factory : Provençale Style Cocoa

Belgium doesn’t have the monopoly on chocolate! In Puyricard, near Aix-en-Provence, the Roelandts family has managed to give it the distinction it deserves, despite it being a delicacy that is not so popular in Provence.

Did you know that chocolate is also a Provençale delicacy? Forty-five years ago, a couple with a passion for chocolate settled in Puyricard, a few kilometers north of Aix-en-Provence. At a time when chocolate was not highly appreciated, the Roelandts boldly opened a factory. A successful gamble, as today the family has built a fine reputation and owns 17 chocolate shops throughout all of France…

And it’s still within a factory in the middle of the Aix-en-Provence countryside that Puyricard hand makes all their chocolate delights. Twenty master chocolatiers juggle between tradition and innovation to create sweet treats from 100 different varieties of chocolate, to which are added natural ingredients: fresh cream from Alsace, vanilla from Tahiti, hazelnuts from the Piedmont region of Italy, etc.

This chocolate factory is especially popular during the Christmas and New Year period, when almost 60,000 kilos of chocolates are sold. Filled with ganache, praline, caramel, or almond paste, it’s amazing to think that it takes barely 10 seconds to eat one of these candies, but that each kilo requires nearly one and a half hours of labor. Over the years, the calisson has also become one of the specialties of Puyricard’s temple of sweet delights; there is no question that this chocolate factory is well and truly Provençale !
