Welcome to Michel Hulin’s Restaurant: La Cabro d’Or

The restaurant La Cabro d’Or is located in a large Provencal farmhouse planted in the middle of a two-hectare park, with a beautiful terrace under the linden trees. Under the direction of the talented chef Michel Hulin since 2001, this generous and open restaurant received a Michelin star in 2002.

Son of a fisherman and a chef, Michel Hulin has been immersed in the culinary world from a young age! With fine experiences under his belt with Gerard Boyer at Château les Crayères and Michel Guérard at Près d’Eugénie, Michel Hulin developed a strength of character that is reflected in his cuisine, and which can be summarized in one sentence “always go all the way.”


His cuisine is Mediterranean and modern. He carefully chooses his suppliers locally and is particularly fond of olive oil: he has even created a tasting menu around olive oil and its soil in the Baux Valley with shrimp tails marinated in Mas des Barres olive oil, roast lamb with garlic cromesquis with olive oil from the Moulin de Castelas, and to finish a strawberry juice “marshmallow” with lemon sorbet and L’Oliveraie des Plantiers oil. In his various set menus and à la carte offerings, he subtly combines soft and crunchy texture with sweet and sour flavors

But for Michel Hulin, what's most important is to offer his customers precisely cooked, well-seasoned and hot dishes. His menu is commensurate with what matters most to him, and makes of the Ousteau de Baumaniére a must in Baux de Provence.
